Jam-making is over for the year, the summer heat has finished off the
strawberries, the apricot season went by in the blink of an eye, it’s
too hot to think of cooking anything at all until evening cools the
air. Even the memory of standing over a simmering pot of jam makes me
perspire.
Some examples of well known snack foods from India.
Indian children love the Khomcha-Wallah. He wanders the streets, the
busier the better, basket of goodies on his head and a cane stool under
his arm. When he encounters a likely crowd he sets down his basket on
the stool and starts to trade. The basket will contain the
half-prepared ingredients of what is known in northern India as chaat -
savoury snacks from traditional Hindu cuisine - which may be served in
a banana leaf bowl.

just me, but every time I feel tired or I feel a cold coming on,

Grenobloise
is a classic French sauce, composed of capers, brown butter or “beurre

Grenobloise, or trout with sauce Grenobloise.
Prosciutto is a traditional aspect of charcuterie in French cooking.
Simply, it is cured meat which is then cured and matured further by
drying in air - leaving a wonderful, intensely flavored butchery
product. Sliced thinly, and served with good, strong country-style
mustard, dried fruits and black bread, it is a great lunch or part of a
late autumn dinner.

really a summer recipe, but if you have a good supply of sweet corn, it
will do fine anytime of year.
When
cooking meats of any kind, there is no sauce like a sauce made from the
meat trimmings and bones of the animal itself. Here’s one suggestion
for a great venison sauce; use it with any roast or pan-roasted
venison, such as leg, rack or loin - the black pepper and juniper lends
itself well to the caramelized flavor of the roasted meat.
What
is Christmas without treats? Does it really seem like Christmas without
them? All those delicious candies are a delight fit for the holidays.

must balance creativity with skill and incorporate some technical

Paella

paella means frying pan or pot. The traditional paella pan is flat and
of large diameter, it can also have handles on each side.
So
the strawberries are finally slowing down, the end of the season is in
sight… and do I feel relief that I will no longer be chained to the
kitchen counter, three nights a week, preparing strawberries for jam?
Am I sick of the sight of them, turning into one myself, in a word,
jaded? Surprisingly enough I’m not. Six weeks of making jam and I could
carry on longer.
More practical musings – hints and tips on making strawberry jam. Sunshine for the rest of the year So I’m preparing strawberries for jam, the third evening this week. It
is the most productive week of the year as far as our strawberries are
concerned. The best are already sold, fresh in punnets and the seconds,
some with scarcely a blemish, others hideously deformed but still
flavoursome, are piled in heaps waiting to be hulled, halved, weighed
and jammed.
